At This Jharkhand Stall, A Special Dish Called Litti Ghugni Is Locals’ Favourite – News18

Every city has its own set of uniqueness, in terms of food. Lucknow is famous for its biryani, while Agra is famous for its pethas. Similarly, in Jharkhand, one particular street food — which is a combo of the famous Litti with Ghugni — is making rounds on the streets of the Giridih district. The people are fond of this dish called Litti Ghugni. Usually, people prefer Litti Chokha; but in Jharkhand, an unusual combination of Litti and Ghughni is loved by many people. The Litti Ghugni is made in a stall in Giridih and is the first choice of the locals for breakfast. It serves dishes at affordable prices like Rs 10, 15 and 20. This stall at Jhanda Maidan is one of the famous stops for commuters. This shop has been running for generations.

While interacting with Local18, stall operator Chandan Sahu said that his grandfather Hari Kishor Sahu started this shop, which was taken over by his father. Now, Chandan is handling the shop. His family has been running it for three generations. Chandan claims that people have been liking the taste of Litti Ghugni here for the past three generations. He says that the same taste has been maintained for years by this shop.

Chandan added that one piece of Litti Ghugni is available for Rs 10. Salted sev, chopped raw onion and green chilli are served on top. The cost of two pieces of Litti Ghugni is Rs 20. The stall is open from 7 am to 6 pm, every day. Chandan earns around Rs 3,000 to 4,000 daily from this shop.

Ghugni is made by first soaking gram in clean water. After this, it is fried in mustard oil with the help of garlic, ginger, green chilli, cumin powder, cloves and cardamom. Now, to thicken the Ghugni, and to make it tastier and flavourful, corn flour is added to it.
