You must have eaten Chole Bhature. You must have tasted Chole Rice. But have you ever tasted Chole Kachori? Chole made from pure Kabuli chickpeas! Many of you will say that you have never tasted anything like this. Actually, there is no concept of Chole Kachori around us.

The shop was started 26 years ago
Lucknow’s Ashok Kumar Gupta opened a food shop near his house in 1998. He also started making chole kachori along with chole bhature. Initially, people thought what kind of a new concept is this? Ashok told people to try it once. People ate it, liked it and after that the shop started running. The shop was earlier on rent, but after some time, the shop was allotted through Awas Vikas Yojana and he opened the shop at Munshi Pulia Chowk.
When we reached the shop, we met Ashok’s son Prince Gupta. Prince is the one who looks after the shop at this time. We asked what is the specialty of the shop that attracts people here. Prince says that you will not get the chola like ours anywhere else. At most places you will get pea or potato chola but at our place you will get pure chickpea chola. We have been feeding people this since the shop opened.
Chole is made at home, not at the shop
Prince says that we do not use ground spices from outside. We buy whole spices from the market. Father gets it ground according to his requirement and then prepares chola. We asked who prepares chola? Prince tells that chola is not prepared at the shop. Mother Neelam Gupta prepares it at home. In the morning a bhagona (vessel) is prepared and brought here, in the afternoon also a bhagona is prepared and everything is finished by 5 in the evening.

A worker at Ashok Gupta’s shop tells us that we soak the chickpeas in water overnight. In the morning, we wash them well and boil them in a pressure cooker with some water. After this, we put mustard oil in the pan. We fry cumin seeds, onion, tomato, fenugreek in the oil. We add salt and turmeric to it so that it melts well. After some time, we add the spices prepared by us and then after cooking it well, we add chickpeas to it. After about 10 minutes, our chole is ready.
Chole is served with lentil shortbread
The kachori served with chole is also special. Pankaj, who has been making kachori here for the last 11 years, says that while kneading the dough, we add so much ghee in it that it becomes very soft after preparation. The spices that are stuffed in the dough balls are prepared in a better way. Urad dal is soaked in water at night. It is ground in the morning. Fennel and asafoetida are added to the ground dal. The quality of fennel and asafoetida is such that the kachori becomes delicious. Understand it through the graphic.
There is one more good thing here. Even today the rate is kept so low that anyone can eat it. Two big kachoris are given with chola, chutney and onion. Its price is only 30 rupees. If you want more chola then take it, it will not cost you anything. We asked some customers who came here about the taste. Ankit says that the chola-kachori here tastes very good. Whatever other things are there, they also taste great. Rahul, who is eating kachori with him, also says that for the last 5 years, whenever we come here, we definitely eat kachori-chola.
Overall, this shop which has been running for 25 years still has the same taste as before. This shop has become a fixed place for customers who love kachori. You can also go if you get a chance.
