This is Ram Asare’s 219 year old shop in Lucknow’s Chowk.
Earlier sweets were made from well water…now sweets are made from ground water
Ram Asare opened a sweet shop in the year 1805 in the narrow lanes of Chowk in Lucknow. D.L. Gupta, who works here, says that well water is considered the purest. That is why all the sweets at the shop were made with well water. This further enhanced the taste of the sweets.
He says that for a long time, sweets were prepared at the shop using well water. But gradually it became difficult to get well water. So, since then we started making sweets using ground water. He says that Malai Gilori is sold the most in the shop. This sweet was made for the Nawabs. Since then, it is the most sold sweet.
Made to cure the Nawab’s addiction to Paan
There was a Nawab of Lucknow… Nawab Wajid Ali Shah. He was very fond of eating Paan after meals. Gradually he got addicted to eating Paan. Due to eating too much Paan, his health started deteriorating. This made his wife very upset. With this problem, the Nawab’s wife sent a man to Ram Asare, the owner of Lucknow’s famous sweet shop.
That man told Ram Asare about Nawab’s problem. He asked him to make such a sweet that after eating it, Nawab’s addiction to Paan would be cured. Then Ram Asare mixed fresh milk cream and dry fruits and prepared Malai Gilori. This sweet was fed to Nawab. It is said that he liked this sweet very much. Every day he started going to Ram Asare and eating Malai Gilori. This also cured his addiction to Paan.

Malai Gilori is beneficial for health along with taste
D.L. Gupta tells that after the cream solidifies in the milk, its layer is removed and kept in a big plate. It is cut in triangular shape and filled with a mixture of sugar candy, pistachio, cashew, almond and cardamom. After that it is given the shape of a paan. It is not only delicious in taste but is also beneficial for health.
D.L. Gupta says that Malai Gilori is prepared in this manner throughout the day. It is made from milk, so it should be eaten the same day.
Two varieties of Malai Gilori are available at the shop
Sale of 20 kg Malai Gilori every day
Shop worker Bablu Trivedi says that on special occasions more than 50 kg of Malai Gilori is sold in a day. Even on normal days, 20 kg of Gilori is sold every day. The price of one kg of Malai Gilori at Ram Asare is Rs 860.
From CM Yogi to former PM, even Malai Gilori is a favourite
Bablu Trivedi tells that CM Yogi also likes Malai Gilori from his shop very much. Gilori is often packed for him. Apart from this, former PM Atal Bihari Vajpayee also liked Malai Gilori very much. Less sugar was used in the Malai Paan prepared for him. After he became PM, Malai Paan was often packed and sent to Delhi for him. Apart from this, sweets were often ordered from the shop for former PM Indira Gandhi as well.
